- Roast the Garlic: Preheat oven to 400u00b0F (200u00b0C). Cut off the top of each garlic head, exposing the cloves. Place each garlic head on a piece of aluminum foil, drizzle generously with olive oil, and wrap tightly. Roast for 45-60 minutes, or until the cloves are soft and golden brown. Let cool slightly.
- Sautu00e9 Vegetables: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add onion, carrots, and celery. Sautu00e9 for 8-10 minutes, until softened and slightly translucent.
