It's the color on this one for me. That deep, vibrant red hits different, especially when it's dripping down the side of a taco.

Method
- Combine tomatoes, jalapeños, onion, and water in a pot. Simmer over medium heat, covered, until the tomatoes collapse and everything is tender. Cool slightly.
- Transfer the mixture to a blender. Add garlic, salt, sugar, bouillon (if using), and vinegar. Blend until smooth, preserving some seeds and texture.
- Taste and adjust vinegar or salt as needed for proper seasoning balance.
