Sultan's Pilaf

Method
- Place a saucepan full of salted water on the stove as if for pasta and add the saffron or turmeric. Bring to a rolling boil and add the rice. The time can vary from 10–12 minutes but taste to be sure.
- When the rice is cooked, drain the water and set the rice aside.
- Preheat a pan and add ½ the olive oil then sweat the onion and red pepper for 3–4 minutes then add to the rice.
- Chop the nuts and slice the dried fruit and add to the bowl of rice as well. Mix the remaining dry spices together and add to the rice.
- Taste for salt and add the cilantro and the rest of the olive oil. Toss again so all is mixed well. This can be made ahead of time and reheated in the oven or served at room temperature.
